Arctic Char is from Iceland and is in the trout family, even though it looks more like salmon. Taste: It has a distinctive flavor between salmon and trout and is more mild than salmon. Arctic Char's flavor appeals to those who enjoy trout but find salmon's flavor too strong. The meat is moderately firm with a finer flake than either the salmon or trout. The high fat content keeps it moist. It has silvery skin with pink spots on the sides and it has green and blue coloration on the back and upper sides. Generally, cook char as you would trout. The skin becomes thick and leathery after cooking, so it's best to remove the skin before serving.
